What I really like about this recipe (besides the yummy treat) is that the last comment says: made with my sister:)  Can't think of anything better than to whip this up and share it with a cup of steaming black coffee (after baking and frosting with a bottle of wine:)
 




 
What's better than Southwestern Chicken Chili


This is really easy if you buy rotisserie chicken and shred.  


Saute a bit of onion, green pepper,and one little seeded jalapeno (I love purple onion and always use Extra Virgin to saute). 
l can kidney and l can black beans (both drained).  
l jar chunky salsa (how about the smoky green chipotle) and l carton chicken broth, then add shredded chicken.


Simmer and Smile



Fix yourself a bowl . . .crunch some taco chips into the soup . . add a dollop of sour cream!

I've always been a fabulous "short order" cook . . (I give my Grandma A. all the credit :)  . . but it is Sandra Lee's idea for Semi-Homemade that makes me a great kitchen goddess!  I like to cook it up fast and hot!

One of my favorites is homemade pizza (start with the Chef-Boy-R-Dee pizza mix and go from there).  I'll detail it on another day . .since today it was Buitoni cheese ravioli, marinara sauce and mild italian sausage (boil first, then brown before adding to the dish:).  Wow.  Fast and Yummy :)  A few baked apples for dessert (cut and slice an apple . .simmer in a pan with a bit of butter, cinnamon, and brown sugar) . . and I'm a happy camper :)

Today it was French Toast (yummy with a bit of vanilla and cinammon and nutmeg) for breakfast . . an a quick and easy French Dip (Boar's Head sliced roast beef simmered in french onion soup on toasted hoagies topped with mozzerella) for dinner.  C'est La Vie :)

A couple of weeks ago I decided to make a breakfast pizza (since we seem to be eating a lot of breakfasts together lately).  I had surfed for a good recipe . . but then it happened, like it always does, the phone rang and one thing led to another while I was in the midst of cooking that my result was something different than originally penned . . .and yet, it was delicious!
            
*Pillsbury Crescent Rolls . . I just laid them out on the pan and baked them flat (buttery and flaky)
*Fresh cut hash browns in the green bag . . over fairly high heat with a bit of EVOO
*Sausage links browned and cut into small chunks
*A decent amount of red onion (I always just hash into the top of it and slice thinly into the pan)
*Eggs . . stirred with a fork and mixed well with Half & Half  . . .then pour over the whole of goods and turn way down to simmer . . as eggs begin to coddle, turn off heat and cover for a couple of minutes . . .
*Serve egg/omelet/fritta dish with wedge of crescent roll and a steaming cup of coffee. . .YUMMY!

ok . . .here are a few more ideas that I hope to try this next week :)

Catfish Po'Boys . . a little dijon in the buttermilk then coated with cornmeal fishfry mix . . salt n peppa .. a little extra virgin to coat the pan before broiling (for 3-4 min each side) . . slather a hunk-o-french bread with mayo and top with tomatoes and lettuce . . sounds awesome!

Now . .

How about Chicken and Broccoli Alfredo?
 . . . Broccoli florets, boneless chicken breasts cut into chunks (or how about some rotisserie chicken to cut down baking time) . . cream of mushroom soup, milk and some parmesan cheese . . .this sounds like an easy one if I can just remember to get it started early enough in the day . .
